7 Layer Salad

A colorful layered salad is the perfect eye-catching dish for any public event. With its visual “pop,” it really stands out in a crowd of casseroles, and let’s not forget, it tastes just as good as it looks!

This recipe pairs well with practically any main course, side dish, and can work for any season. Anywhere you decide to take it, you can’t go wrong.

Ingredients

  • 1 large head of romaine lettuce, chopped

  • 3 stalks of celery, chopped

  • 1 cup frozen peas

  • 3/4 cup green onion, chopped

  • 1 cup cheddar cheese shredded

  • 12 oz bacon, cooked and chopped (crispier is better)

  • 1 cup plain yogurt

  • 1 clove garlic, crushed

  • 1/4 tsp honey

  • 1 Tbsp lemon juice

  • Seasonings: cumin, salt, pepper, herbs

Directions

  • Prep Ingredients
  • Cook bacon until relatively crispy, drain, and set off to the side to cool
  • Prepare the dressing by mixing yogurt with garlic, honey, lemon juice, and seasonings to taste – careful not to overdo the salt because the bacon and cheese will add some saltiness to the salad
  • Assembling the Salad
  • In a large bowl layer the chopped ingredients evenly in the following order:
    1) chopped romaine lettuce
    2) chopped celery
    3) frozen peas
    4) chopped green onions
  • Spread the dressing evenly across the top of the salad
  • Add shredded cheese 
  • Top with chopped bacon
  • Chill until ready to serve
